Sunday - Man The Grill !
He Starts ...... with a handfull of apple twigs saved over the winter for just this sort of day....
He introduces a rack of pork marinated overnight with honey garlic sauce ....
He sets up his grill with fire under the smoke pack and a drip pan under the roast....
After a couple hours at a low flame the meat is 120 f and he adds potatoes and onions bathed in oil and sprinkled with lemon pepper and salt. After 20 minutes he adds fresh asparagus tips marinated in raspberry vinagrette.......
After searing the spears he puts them up on the top rack for 5 minutes.....
The meat is 160 f now and perfect ....
Et Voila .... a meal fit for my children's mother!
